The naturally rounded, soft character of the Chamomile flower is a perfect match for honey based flavours and here we have combined the two with a splash of grapefruit for added zing.

Ingredients
Serves 1
1 Hope & Glory Chamomile pyramid or
1 tsp Hope & Glory Chamomile loose tea leaves
100ml (4oz) boiled water
50ml (2oz) gin
15ml (0.5oz) honey
25ml (1oz) fresh pink grapefruit juice
Method
Step 1
INFUSE a Chamomile pyramid or loose Chamomile flower heads in 100ml of boiled water for 5 minutes
Step 2
REMOVE pyramid, or strain if loose, refrigerate to cool.
Step 3
COMBINE 25ml (1oz) cooled chamomile with all other ingredients.
Step 4
SHAKE over ice, and strain into a chilled cocktail glass.
